In the last 50 years, the Austrian baking machine manufacturer Koenig has grown from a one-man business into the worldwide Koenig group. The product portfolio covers the entire bakery production chain: From mixing, over dough dividing and rounding, forming and proving, up to baking and cooling. The variety of rolls and pastries is endless and considers particular eating behaviors worldwide. For the company, the support of artisanal bakers and that of industrial operations do not contradict each other as they will find the ideal solution for every bakery, matching the size and requirements of each operation. The company perceived an increased demand for large production lines and complete turn-key solutions. For this reason, the company founded the Koenig Technology Project management office in Verona, Italy. This office handles the planning of entire bakeries. In 2015, the company presented the new hygienic design series "H" for the first time. Ever since, the company redesigns established machines to correspond to high demands in terms of cleaning and maintenance. The newest member in this series is the Menes-H, a high capacity dough sheeting line with an hourly dough throughput of up to 5,000 kg. The common aim was to achieve optimum accessibility, which has resulted in an entirely reconfigured frame design to minimize all surface contamination. The mechanical drive components are fully encapsulated to separate them from the dough area. Sealed bearings enable cleaning with splash water.
